Ingredients
MUFFINS
- 1 green apple, cored
- 65 grams coconut oil
- 60 grams full cream milk
- 40 grams Maple syrup
- 1 egg
- 110 grams Wholemeal SR Flour
- 40 grams rolled oats
- 1 tsp ground cinnamon
- 6 Peeled thinly sliced apple slices, for topping

1. Preheat oven to 180 degrees fan forced.
2. Grate apple for 3 seconds, speed 8. Scrape down bowl.
3. Add liquids. Mix on speed 5 for 3 seconds.
4. Add flour, oats and cinnamon for 5 seconds speed 5.
5. Spoon into muffin tins and top each with the thinly sliced apple ring. Bake at 180 degrees fan forced for 20 - 25 minutes or until skewer comes out clean.

Tip
This can be made dairy free by substituting the milk for a nut milk.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
