Ingredients

SOUR CREAM PASTRY

  • 250 grams spelt flour
  • 180 grams Butter
  • 125 grams sour cream

STEWED CINNAMON APPLE

  • 8 apples, peeled, cored and cut into 2 cm chunks
  • 30 grams water
  • 4 cloves
  • 1 tsp cinnamon, ground

Recipe's preparation

    Sour Cream Pastry
  1. 1.  Add flour and butter into mixing bowl.  Turbo for a couple of seconds until mixture resembles crumbs.

     

    2.  Add sour cream into Closed lid"Closed lid" and mix for 20 seconds speed 9.

     

    3.  Divide pastry into two parts, roll each out to about 1 cm thick and refridgerate until needed.

  3. 1.  Add all your apple filling ingrediants into Closed lid"Closed lid" and cook for 25 minutes/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" .

     

    2.  Set aside in separate bowl and cool to room temperature.

  4. Assembly
  5. 1.  Roll one of the portions of pastry into a metal pie tin.  Line with pie weights and blind bake on 180 degrees celsius fan forced for 15 minutes.

     

    2.  Arrange apple into pie case when both are cooled down.

     

    3.  Gently lie the second rolled out portion of pastry over the pie and bake for 30 minutes at 180 degrees celsius fan forced.  Leave to cool in oven.

Tip

Note:  I found the pastry quite "sticky" and difficult to roll off my thermomat, however, you can manipulate and mould the pastry by hand to fill your pie shell.  Refridgerating the pastry when not in use, helps keep the shape slightly.

    Apple pie has always been my favourite. Delicious melt-in-the-mouth pastry. I've never made sour cream pastry before but will be my go-to recipe from now on. Top marks from me.

    Absolutely fantastic  tmrc_emoticons.) - Just added a bit of sugar like Heidi due to using Granny Smiths.

    This was a lovely pastry recipe to work with..... the dough was like silk and so easy to roll out (yes a bit sticky but I floured my mat and kept in the fridge before fitting in my dish).

    And when baked, so light and short! I also loved that it made a generous amount - I often find I have to be meagre and really stretch my dough to fit my dish. 

    I added a bit of brown sugar (2 Tblsp) to my apples as I used granny smiths and they were a bit tart and the filling was perfect.

    Hubby declared this the best apple pie so this recipe will be a keeper - thank you. 

    NB I used a TM31 with no probs!
