Ingredients

Cake

  • 150 g golden syrup
  • 125 g Butter
  • 300 g S.R flour
  • 100 g caster sugar
  • 40 g Coconut
  • 2 eggs
  • 1/4 litre Milk

Icing

  • 60 g Butter
  • 1 teaspoon honey
  • 1 teaspoon vanilla extract
  • 360 grams icing sugar
  • 20 grams hot water

Recipe's preparation

    Dough
  1. Measure butter and golden syrup in bowl. Melt 60c, sp 4, until just mixed.

    Add all other ingredients ( except icing ) and mix sp4-5 until well combined.

    Spread into a greased/lined 20cm cake pan. Spring form works well.

    Bake at 160 fan for about 40mins or until done when tested.

    Cool on cake rack.
  2. Icing
  3. Add all ingredients into clean bowl and whizz sp 4-5 until smooth and creamy.

    Spread over top of cooled cake...enjoy!

    Can also be served with a dusting of icing sugar rather than icing.

    Made this for afternoon tea on Anzac Day. Really nice quite large cake. Also made the icing which I think made it perfect. Will definitely make again.

    The cake was delicious, nice and light and fluffy... , as for the icing, not a huge fan... it tastes ok on the cake but the bit I tasted alone was rather yuck. .... what I did was ice half and Just sift icing sugar over the other half..

    would happily make again without this icing... Not sure if a cream cheese icing would go ok? I don’t think it would.. I’m far from a great cook lol any suggestions on an icing that would go with this cake? Thanks

    Absolutely delicious cake, enjoyed by all on ANZAC Day after a big morning at services. I reduced the sugar in the cake to 60g and it was sweet enough, especially with the delicious icing. Everyone is asking me to make it again...thankyou Smile

    Made as cupcakes to make it easier to use leftovers in lunchboxes. Used GF flour in place of regular flour. Reduced sugar in cake to 50g given it was covered in sweet icing anyway, and no one complained! Big hit.

    Soo very moist and tender cake! I used golden syrup and molasses as i didnt have enough of the syrup but it turned out wonderfully. Also added maple instead of honey to the icing. Will definitely be making this again!!

    Elzbeth:great idea I love that you've made this a 1 jug recipe. I'm a lazy cook too, I hate washing that damn bowl jug thingy.
