Ingredients
For the muffins -
- 2 Medium sized apples, about 200g
- 3 carrots, about 220g peeled
- 4 eggs
- 120 grams Grapeseed Oil
- 250 grams raw sugar, Rapadura prefered
- 2 teaspoons vanilla extract
- 100 grams pecan halves
- 100 grams sultanas
- 50 grams Shredded coconut
- 300 grams spelt flour, or plain flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon ground
- 1/4 teaspoons sea salt

Quarter apples and place apples and carrot in TM bowl, chop
5 seconds/speed 5 set aside.
Into TM bowl add eggs, oil, sugar and vanilla extract, mix
10 seconds/speed 4
Add pecans, sultanas, coconut, and chopped apple and carrot, mix
6 seconds//speed 4
Weigh in flour, add baking powder, salt and cinnamon, Mix
6 seconds//speed 3
Grease 10-12 capacity muffin tray and divide mixture into holes to about 3/4 full.
Bake for 25-30 minutes until a skewer comes out clean.
Heat oven to 180 deg C
Tip
I adapted this recipe from Ottolenghi, The Cookbook. Easy, wholesome and delicious. In Ottolenghi's version, you can add a crunchy topping before cooking the muffins, by combining 50g unsalted butter (chopped), 75g plain flour, 25g sugar, 50g rolled oats, 15g sunflower seeds, 25g pumpkin seeds, 15g black sesame seeds, 1 teaspoon of water, 1 teaspoon of vegetable oil and 1.5 tablespoons of honey in your TM bowl and mix
