Ingredients
Chicken Marinade
- 1 clove garlic
- 1 bunch parsley, leaves only
- 1 bunch basil, leaves only
- zest of 1 lemon
- 30 grams olive oil
- 500 grams chicken breast, about 2, halved lengthways
Puttanesca Sauce
- 1 onion, peeled, quartered
- 20 grams olive oil
- 1 tablespoon vegetable stock concentrate
- 2 tablespoons tomato paste
- 70 grams sundried tomatoes, drained
- 3 anchovy fillets
- 50 grams pitted olives
- 400 grams tomato passata
- 100 grams red wine
Green Vegetables
- 1 bunch broccolini
- 200 grams sugarsnap peas

Add garlic and lemon zest to TM bowl, chop
3secs sp7
Add herbs, chop
3secs sp6
Scrape down sides, add olive oil, mix
10secs sp5
Place chicken in a non metallic bowl and rub marinade all over it. Set aside.
Without cleaning the TM bowl, add onion and chop,
3secs sp7
Add oil and saute,
5mins Varoma sp1
Add all other sauce ingredients and cook,
5mins Varoma "Counter-clockwise operation" sp1
Place chicken in varoma tray, spaced evenly with some holes uncovered. Position varoma on to TM and cook,
10mins Varoma "Counter-clockwise operation" sp2
Add green Vegetables to varoma dish and continue cooking,
7mins Varoma "Counter-clockwise operation" sp2
Check chicken is cooked through, if not, cook for an extra 2 minutes Varoma "Counter-clockwise operation" sp2. You will need to remove vegetables first to prevent them from overcooking.
Divide chicken amongst plates, pour over sauce and serve with the green veg.

Was a great easy recipe. Adding chilli flakes & ground pepper gave it a bit of spice. I think some bacon would have been good also
