Ingredients

Apricot, Yoghurt and Coconut cake

  • 190 grams raw sugar
  • 125 grams Salted butter
  • 200 grams apricot nectar, canned
  • 2 --- eggs, Large, lightly beaten
  • 125 grams yoghurt, pot set / natural
  • 40 grams dessicated coconut
  • 215 grams self-raising flour

Recipe's preparation

  1. Pre heat oven to 180 and prepare tin, I like using a bundt tin.
  2. Add sugar to bowl and blitz 5 sec speed 8.
  3. Add butter to bowl and melt for 3 minutes at temp 60, speed 2
  4. Add apricot nectar, yoghurt and eggs, mix 10 seconds Counter-clockwise operation"Counter-clockwise operation" speed 3.
  5. Add coconut and s.r. flour, mix 15 seconds Counter-clockwise operation"Counter-clockwise operation" speed 3, Scrape down with the spatula and make sure that everything has blended well.
  6. Pour into prepared tin and smooth top, tap a couple of times on the bench to remove air bubbles and bake for 40-45 mins. Cake is done when a skewer comes out clean.
  7. Allow to cool in tin for at least 10 mins before inverting onto a wire rack to cool completely before icing.

I use this recipe from Cookidoo for my yoghurt and always add a hefty scoop of Full Cream Milk Powder to the mix before mixing and heating to room temp. Smile And the little Glass Yoghurt Jars from the MixShop are the perfect portion for this recipe which I find really helpful.
