Ingredients

Biscuit Base

  • 125 grams softened butter
  • 100 grams Caster sugar
  • 150 grams SR flour
  • 75 grams plain flour
  • 1 eggs
  • 1 teaspoons vanilla essence

Apricot Topping

  • 300 grams Dried apricots
  • 1 tablespoon sherry
  • 125 grams hot water
  • 2 tablespoons sugar

Meringue

  • 2 egg whites
  • 100 grams caster sugar
  • 75 grams desicated coconut

Recipe's preparation

    Apricot Topping
  1. Preheat oven to 170-180 degrees. Line a lamington tray.


    Place apricots into TM bowl and chop 8 sec/speed 6. Add sherry, boiling water and sugar and mix for 3 mins/temp 100deg/speed 2. Pour into a bowl and set aside to cool slightly.

  3. Without cleaning the TM bowl, place butter, sugar, plain flour, SR flour, 1 egg and vanilla into bowl. Mix for 20sec/speed 5.

    Spread out evenly into a lamington tin. Bake in a moderate oven for 20mins. While the base is cooking prepare the meringue.

  5. Thoroughly clean and dry the TM bowl as recommended.

    Insert butterfly whisk.

    Add egg whites and beat for 3 mins/50 degrees/speed 3.5

    Set the timer on 3 mins & slowly add the sugar through the hole in the lid.

    The meringue should be thick & glossy. Add the coconut and mix for 5 secs/Reverse/speed 3.




    Remove base from oven and spread apricot mixture evenly, then top with meringue. Return to the oven for a further 15mins or when meringue is cooked.

Tip

Thoroughly clean the TM bowl, blade, lid, MC and spatula before preparing your Meringue.

Turkish Apricots not recommended for this recipe.
