Ingredients
Cake
- 150 grams Plain Flour.
- 1/2 teaspoon baking powder
- 1/2 teaspoon Bi Carb Soda
- 1/8 teaspoon salt
- 125 grams unsalted butter, Softened
- 140 grams sugar
- 1/2 teaspoon Pure Vanilla Extract
- 1 egg
- 150 grams Greek yoghurt
- 150 grams fresh blueberries

- 1-Preheat oven to 180 degrees and position rack to middle of oven
2-Line a 24cm round springform pan
3-Place all ingredients into bowl except Blueberries and mix on Speed 4 "Counter-clockwise operation" 20 secs.
4-Pour into pan and scatter evenly on top with the Blueberries.
5-Bake until cake turns golden brown and the tester comes out clean approx 30-35 mins. Leave cake to cool in the pan on a wire rack.
Tip
Ensure all ingredients are at room temperature. If using frozen blueberries allow addition cooking time.
Depending on your oven this cake can take between 35 to 40mins. Check if cooked after 35 mins and then at short intervals thereafter.
Vary the recipe by sprinkling finely chopped nuts on top with blueberries.
Cake is not a tall cake and has a moist & crumbly texture.

Perfect afternoon tea cake. Light but moist. I used Vanilla coconut yoghurt which gave it a super mild twist to the flavour. I much preferred eating the batter... hahahha. It will go in my recipe book as a constant.
