- 2 oranges
- 220 grams soft butter
- 3 eggs
- 125 grams sugar
- 250 grams Self Raising Flour
- 50 grams Desiccated Coconut

Preheat oven to 170 °C and grease and line a ring tin.
Remove rind only from 2 oranges and place in TM5 bowl.
Remove the white pith & quarter 1 whole orange and add to rind.
Add butter to orange and rind and mix for – 8sec/Speed 8.
Scrape down mixture and add eggs and sugar and beat - 20sec/"Counter-clockwise operation" /Speed 4.
Add coconut and flour and combine – 20sec/"Counter-clockwise operation" /Speed 4.
Pour mixture into lined tin.
Ensure mixture is evenly distributed in the tin.
Bake for approx. 40mins at 170 °C.
Leave in the tin to cool.
Optional- Use juice from 2nd orange and icing sugar to make a runny icing to drizzle over cake
Method
Tip
All ingredients should be at room temperature.
Don’t over mix when flour is added.
To fill tin easily use a piping bag.
If required adjust cooking time or temperature to suit your cooking conditions.
Test by inserting a skewer and it should come out clean.

This is so light! Easy and tasty.
I made the following adjustments, I'll increase the sugar a little bit, it was borderline not quite sweet enough!
Reduced sugar (and used coconut sugar) to 75g
Butter was 230 g
small oranges, so used 1.5 oranges juice
added a 1/4 cup rolled oats with coconut and flour to add a little moistness
Combined 2 dessertspoons coconut sugar with about a 1/4 cup of juice from some cumquats that had been boiled for jam, added about an 1/8 of a cup water, simmered for a minute, for a bittersweet drizzle.

Love this cake. So easy and very moist.
Great recipe, thank you! I only had blood oranges and it had a lovely taste. It also made the icing pink and I sprinkled shredded coconut on top too.
