Ingredients
Muffins
- 300 g spelt flour, white
- 90 g Rapadura Sugar
- 2 1/2 tsp baking powder
- 45 g desicatted coconut
- 1 tsp dulse flakes
- 50 g sunflower seeds
- 2 bananas, roughly chopped
- 100 g macadamia oil, (or 90 g softened butter)
- 1 egg
- 120 g coconut milk
- 120 g yoghurt
- 1 tsp vanilla extract
- 130 g berries, (can be frozen)

Preheat your oven to 180 degrees celcius.
Firstly you need to chop your sunflower seeds:
4 seconds/speed 6
Next, add all dry ingredients to bowl and mix gently together:
15 seconds/speed 4
Add bananas, oil (or butter), egg, coconut milk, yoghurt and vanilla:
Mix well 15 seconds/speed 5
Incorporate your berries:
10 seconds/speed 4
Spoon mixture into preprepared muffin tins and bake in a moderate oven for 30minutes.
Tip
You could replace the berries with some lovely dark chocolate chunks!

My kids love these muffins! Really nice with choc chips in place of the berries too
Moist and delicious wholefood muffin. Made mini muffins ( approx 60!!!!!!).
Used butter not mac oil so could take to school and strawberries as berry option.

These are amazing! So yummy and moist! I didn't have any coconut milk, so used coconut water instead, and the flour i used was 200gms GF flour and 100gms LSA. So so yum, will definitely be making these again!

Delicious!! I didn't have enough spelt flour so used a mix of spelt, rye and white wings gluten free and they came out perfect. Big hit with the little man
