Ingredients
Banana Cake
- 120 grams Butter
- 120 grams sugar
- 2 eggs
- 250 grams SR flour
- 120 grams Milk
- 2 Large Ripe Bananas
- 1/2 teaspoon bicarb soda
Cream Cheese Frosting
- 100 grams cream cheese, cubed
- 230 grams icing sugar
- 50 grams Butter

Grease and line a 23cm spring form pan.
Melt butter in the TM bowl at 60C for 2 minutes on speed 4.
Add sugar, eggs, flour and milk and combine on speed 5 for approximately 30 seconds.
Add bananas and bicarb soda and mix on reverse for 15 seconds on speed 3.
Pour mixture into pan and bake into a pre-heated moderate oven for approximately 40 minutes or until cake springs back.
When cooled slightly, turn out on to a wire rack to cool completely before spreading the topping over.

Tip
Sprinkle with chopped walnuts or shredded coconut!

I made this into a sandwich cake, using gluten free flour, also used a little vanilla essence in the icing.
Turned out delicious also used 3 bananas which helped make it moist, as gluten free flour can make a dry cake.

An absolutely scrumptious cake and so easy. I added some cinnamon to the cake batter. This will be on my repeat recipe list.
Beautiful and fluffy cake and the icing made the perfect amount. I also added the banana and wizzed for 20sec at Spd 7 before I added bicarb & cinnamon and reversed for 15sec.
Lovely cake thank you. I added a bit less sugar in the mixture but added some cinnamon which was yum. I also added some lemon rind to the icing mixture.
