Batter

  • 125 grams Butter, chopped
  • 140 grams brown sugar
  • 2 eggs
  • 3 bananas, mashed
  • 125 grams Milk
  • 190 grams SR flour
  • 80 grams dessicated coconut
  • 1 teaspoon mixed spice
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 180 and grease and line a loaf tin.

    Break bananas in half and mash in mixing bowl for 4 seconds on speed 4. Sit aside and wipe out bowl.

    Add brown sugar and butter and cream for 30 seconds on speed 5. Scrape down sides of bowl.

    Add eggs and mix for 10 seconds on speed 3.

    Add bananas and milk, mix for 10 seconds on speed 2.

    Add remainder of ingredients; flour, coconut, spice and salt and combine for 20 seconds on speed 3.

    Bake for about an hour, or until cake springs back when touched, or a skewer comes out clean. 

    Cool completely before storing in an airtight container.

Tip

Overmixing the batter will cause the cake to become too fine and ot rise properly. A quick mix until just combined is best. Some butter mixture may remain under blades, a quick scrape with the spatula and fold into the mixture before putting in tin resolves this.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
