Ingredients

  • 250 g Raw beetroot
  • 180 g plain flour
  • 2 tsp baking powder
  • 250 g honey
  • 75 g Cacao
  • 3 eggs
  • 1 tsp vanilla essence
  • 50 g coconut oil
  • 250 g buttermilk
  • 1 Finely grated orange zest
  • 200 g cream
  • 25 g raw sugar, optional for sweetening cream
  • 16 Washed Whole Fresh raspberries
  • 16 Washed small Mint leaves

Recipe's preparation

    Method
  1. Pre-heat oven to 175c fan-forced.

  3. Cream
  4. [optional] raw sugar [sp 7, 10 sec

  5. Insert butterfly whisk

  6. Add cream [sp 4, 30 sec]

  7. Place in fridge until needed. 

  8. Brownie
  9. Beetroot [Sp 7, 40 sec].

  10. Add flour, baking powder, cacao and honey [Sp 5, 30 sec].

  11. Add the eggs, vanilla and oil & buttermilk [Sp 4, 20 sec].

  12. Scrape down sides mix again until well combined [Sp 4, 20 sec].

  13. Lightly grease 20cm cake tin [square] with olive oil. 

  14. Spread Zest evenly into greased tin then pour Brownie mixture on top. 

  15. Bake 175c fan-forced oven for ~15 minutes or until a toothpick inserted in the middle comes out clean

  16. Serve
  17. Place tin on grill to cool for 30 minutes.

  18. Remove brownie base and cut into serves of 16. [4 x 4]

  19. Pipe cream onto the top add mint leaf and berry to each. This adds to the flavour combination. 

  20. Serve and enjoy. 

Tip

This is not very sweet. You may wish to add more honey to taste.
