Ingredients

Soup

  • 1 --- brown onion, peeled & quartered
  • 1 cube fresh ginger, 1 cm x 1 cm
  • 20 g olive oil
  • 1 can Creamed Corn, 420g
  • 1 can corn kernals, OR 2 x fresh corn kernals
  • 600 g water
  • 1 tsp macadamia oil
  • 1 tbsp TM stock paste
  • 3 --- Chicken thigh fillets, cubed
  • 2 tsp iodised salt
  • 2 tbsp cornflour
  • 2 --- egg white
  • 1 --- spring onion, for garnish

Recipe's preparation

    the broth
  1. put onion in the bowl [3sec, sp7]

  2. add ginger, olive oil saute [2min, 100C, sp1]

  3. Add 580g water, kernals, creamed corn, water, macadamia oil, 1 tbsp salt, TM stock to bowl.

  4. place chicken in steaming basket and insert [13min, 100C, sp1, reverse]

  5. pour soup mix into thermoserver... 

  6. put cooked chicken into bowl and shred [5sec, sp4, reverse]

  7. mix 1tsp salt, cornflour, remaining water and egg whites.

    pour through lid while [2min, 100C, sp1, reverse]

  8. Serve
  9. chip the green part of the spring onion for garnish... diagonal slices or very thin long ribbons.

    Yummy. I used creamed corn, added the ginger in with the onion, and added a splosh of Tamari, oyster sauce and fish sauce at the final cooking step. Used previously cooked chicken.
    Easy to make and delicious!

    Thanks for the recipe. I think it needs a bit of a twist. If I make it again I will use only creamed corn. I got confused with step 3 having "water" twice and the final step with the corn flour it didn;t work well.

    Firstly, thank you for sharing your recipe. I think it woud be great if you revised a few steps in your recipe as I think the ginger should be chopped with the onion and it would also make sense to put all the soup back in with the chicken no? I also noticed that my chicken has not cooked properly in the steamer so had to cook it a bit longer, maybe recommending stirring in the 13 mins would be good too and less salt or even none as the TM stock paste already has salt so no extra required. I also added vermicelli noodels to mine in the thermosever.

    Assumed ginger should be chopped too? Also in the last stage, is the egg added just to the chicken, or is the soup put back in first?

    I had to double the cooking time despite having less chicken than stated as it wasn't cooked but the end result was lovely despite some issues with the recipe instructions

    YUMMO!!!! My " I don't like soup" Hubby loved this, chunky soup!!!! I didn't put the salt in and I added an extra chicken thigh. The cooking time was almot double the recipe. I also use corn cut from the cob. Served it with thermie homemade bread and butter!!! YUMMMMMMMMMYYYYY. Hubby told me when I was making it..to make sure I had a 'main meal' too.....hehheh had to throw out the main meal.....he couldn't finish it!!! (Luckily it was left overs anyway!!!) LOL

    Great easy, quick soup.

    Made this last night. So easy and quick.  I added frozen corn as I did not have any tinned and we used one chicken breast.  Daughter and husband loved it.  Will be on high rotation during winter months.  Thanks so much
