Ingredients

Rice for Stuffing

  • 2 cloves garlic
  • 1 --- brown onion, halved
  • 60 g Butter
  • 45 g olive oil
  • 1000 g water
  • 2 tbsp TM stock (veg or chicken)
  • 500 g long grain rice
  • 1 --- bay leaf, dried
  • 2 tsp oregano, dried

Non-Vegetarian Addition for Stuffing

  • 250 g pork mince
  • 250 g Veal mince
  • 2 tbsp olive oil
  • 2 tbsp tomato paste

Stuffed Zucchini

  • 12 --- zucchini, sliced in half longways with the center removed
  • 12 --- tomato, ripe, halved
  • 2 tsp salt
  • 2 tsp balsamic vinegar, optional [may wish to use 1tsp sugar]
  • to taste fetta cheese, crumbled

Recipe's preparation

    Stuffing
  1. Follow the recipe: 

    GREEK OVEN RICE IN THE TM5! - SO QUICK AND EASY

    Using the Rice for Stuffing ingredients.

    Should you wish to add the Non-Vegitearian option: 

    Lightly fry the pork and veal mince together with the olive oil and tomato paste. It does not need to be heavily fried as the meat will cook further in the oven. 

     

    This can be done quickly while the rice is finishing off. 

     

    Once both are ready, mix rice and meat mix together.

    Mix the tomato, salt and vinegar [5sec, sp7]

    Put the zucchini on a baking tray with the hollow upward and put stuffing in the hollow. Be generous and pat the stuffing down. 

  5. Pour the tomato mix over the stuffed zucchinis.

     

    Then sprinkle with fetta. 

  6. Bake in a pre-heated oven on 220C for 20 mins covered and then 20 mins not covered.  

Tip

The same method can be used with substituting the zucchini for:

cabbage leaves

tomatoes

capsicum

spinich

vineleaves

egg plant

*Note the oven time will vary

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This was really good! I have a TM 31 so cooked rice by chopping onion and garlic, saute in butter and oil. Add the water, stock and oregano and set to 100deg 15 min reverse 1. After 5 mins i removed the MC and added in the rice...leave the MC off, 10 mins later its done!

    i was going to make this but I don't have TM5 only TM3 so do not have the instructions for Creek Oven rice can you post cooking instructions as recipe looks delicious thanks.
