Ingredients
Brown Butter Choco Chips Cookies
- 250 g all purpose flour
- 1 tsp baking soda
- 3/4 tsp salt, sea
- 225 g unsalted butter, in cubes
- 2 egg, large
- 215 g Dark Brown Sugar
- 70 g cristal sugar
- 2 tsp vanilla extract
- 200 g chocolate chip, dark (70% cacao)
- 1/4 tsp salt flakes, for sprinkling

- Place a bowl on top of the Thermomix bowl and weight 250g flour + 1 tsp baking soda + 3/4tsp salt. Mix well with a fork and setaside.
- Add 225g butter to the Thermomix bowl and cook for 25 min - 120ºC - "Gentle stir setting"
Measuring cup removed. - After cooking time, remove the Thermomix bowl from the base and let it cool down for about 10 minutes (until internal temperature is under 45ºC).
- Add 215g brown sugar, 70g cristal sugar, 2 tsp vanilla, 2 eggs. Mix 1minute - speed 4. (misture should be pale, if not, mix for another 30 seconds).
- Add dry ingedients and mix 15 seconds - speed 3.
- Add chocolate chips and mix 5 seconds -"Counter-clockwise operation" speed 3
- Involve the dough with the spatula to finish mixing chips (DO NOT OVER MIX). Mixture should be loose at first, allow to sit in room temperature for 30 minutes to allow flour to hydrate.
- Pre-heat oven to 375ºF. Using an ice cream scoop, portion out balls of dough amd placeon a parchment lined baking sheet. Donot flatten, cookies will spread as they bake. Sprinkle with sea salt.
- Bake until cookies are golden brown and firm but centers are still soft. About 10 min.
Let them cool on baking sheet for 10 minutes and move to a wire rack tocool completely.

you can use icing sugar too. Cristal sugar is the same as granulated sugar or white sugar.

These were amazing.
I didn't put toffee in them and for the chocolate I used good quality (Whittakers) milk (70gm) and dark (130gm) chocolate and they turned out super gourmet and chewy!
Will be making again...and again
