  • 360 g cheese, do your favorite combination, I like 280g feta + 80g mossarela
  • 80 g Milk
  • 80 g water
  • 80 g oil
  • 1 level teaspoons salt, (depending on the saltiness of your cheese combination
  • 400 g Tapioca or Cassava starch
  • 2 eggs

Recipe's preparation

  1. Shred the cheese 5sec/sp 7 - set apart.

    Put salt, water, milk and oil to heat 3.5min/sp2/95°C.

    Add tapioca starch through the hole in the lid over running blades while mixing for 30 sec/speed 3

    Let it cool until room temperature (it might take 30/40 minutes in the fridge) and using the spatula scrape down the sides and the bottom of the . Mix 5 sec/sp 3.

    Add the eggs and Dough mode"Dough mode" for 30 seconds. Using the spatula, check if there is no big lumps of tapioca starch in the dough.

    Add cheese and Dough mode"Dough mode" for more 2min. Check it out during this process to ensure there isn't a big lump of tapioca without chesse. I usually assist the process pressin down the dough with my spatula while is kneading for few seconds. At the end the dough must be homogeneous. If not, press the up part down to the blades and Dough mode"Dough mode" for more 30 seconds.

    Form little balls with help of two spoons. (You can freeze it at this stage)

    Bake in 200°C preheated oven for 20/25 min or until little light golden spots start to show up.

Tip

This is a tradicional recipe of Brazilian "Pão de queijo". It use to be my family recipe that I've converted to Thermomix.

You can make your cheesy balls the size you like, there's no right or wrong size for them. Just keep in mind they do rise when baking. Personally, I like to roll them using a very heaped tsp, and then I use other tsp to help pull it out of the first to the baking sheet. When baked, they'll be the size of a ping pong ball.

If you find it easely, you can add 2 TBSP of sour tapioca starch (polvilho azedo) in step 3, it works just fine without it though.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
