Ingredients

Chocolate Cupcake

  • 100 grams 70% dark cooking chocolate
  • 1 cup Milk
  • 125 grams unsalted butter, room temperature
  • 1 1/4 cup brown sugar
  • 3 eggs
  • 1 cup almond meal
  • 1 cup Self Raising Flour Gluten Free
  • 1/4 cup dutch process cocoa powder

Chocolate Buttercream

  • 250 grams unsalted butter
  • 3 cups icing sugar
  • 100 grams 70% cocoa dark cooking chocolate

Recipe's preparation

    1. Preheat oven to 160C.
    2. Melt chocolate and milk in Thermomix bowl 3-4 min/50C/speed 3. Set aside and clean bowl.
    3. Beat butter and sugar 20 sec/speed 5 until pale and creamy. Add eggs one at a time with motor running 10 sec/speed 4.
    4. Add flour, almond meal and cocoa and mix 10 sec/speed 4. Add melted chocolate and mix additional 10 sec/speed 4.
    5. Spoon in muffin tray and bake for 20 min.
    6. To make chocolate buttercream place icing sugar in bowl and mix 5 sec/speed 9 to remove lumps. Add butter and mix 30 sec/speed 4. Add cooled melted chocolate and mix 15 sec/speed 4.

Tip

Ensure cupcakes have completely cooled before piping the icing otherwise buttercream will melt.
