Ingredients
Chocolate Cupcake
- 100 grams 70% dark cooking chocolate
- 1 cup Milk
- 125 grams unsalted butter, room temperature
- 1 1/4 cup brown sugar
- 3 eggs
- 1 cup almond meal
- 1 cup Self Raising Flour Gluten Free
- 1/4 cup dutch process cocoa powder
Chocolate Buttercream
- 250 grams unsalted butter
- 3 cups icing sugar
- 100 grams 70% cocoa dark cooking chocolate

- Preheat oven to 160C.
- Melt chocolate and milk in Thermomix bowl 3-4 min/50C/speed 3. Set aside and clean bowl.
- Beat butter and sugar 20 sec/speed 5 until pale and creamy. Add eggs one at a time with motor running 10 sec/speed 4.
- Add flour, almond meal and cocoa and mix 10 sec/speed 4. Add melted chocolate and mix additional 10 sec/speed 4.
- Spoon in muffin tray and bake for 20 min.
- To make chocolate buttercream place icing sugar in bowl and mix 5 sec/speed 9 to remove lumps. Add butter and mix 30 sec/speed 4. Add cooled melted chocolate and mix 15 sec/speed 4.
Tip
Ensure cupcakes have completely cooled before piping the icing otherwise buttercream will melt.

Delicious! Made into mini cupcakes. Soft and fluffy. I used rice flour instead of almond meal so they were ok to send to school. I think I'll see if I can get away with halving the sugar. Great recipe. Thank you.
