Ingredients

Cake

  • 200 g carrots
  • 150 g walnuts
  • 120 g raw sugar
  • 2 eggs
  • 125 g EVOO (extra virgin olive oil)
  • 125 g wholemeal flour
  • 1/2 tsp bicarbonate soda
  • 1 tsp baking powder
  • 1/2 tsp Five Spice Powder
  • 1/2 tsp salt
  • 1 tsp vanilla essense

Recipe's preparation

    Cake
  1. 1. Pre-heat oven to 180c and grease/line a 20cm Round Cake Tin. Set aside.

    2. Place the walnuts into the TM bowl and mill for 3 seconds on SP9. Set aside.

    3. Place carrots into the TM bowl and chop for 4 seconds on SP5. Set aside.

    4. Place eggs, vanilla, sugar and oil into the TM bowl and mix for 5 seconds on SP5.

    5. Add flour, bicarbonate soda, baking soda, spice and salt and mix for 8 seconds on SP5.

    6. Add walnuts and carrots, and mix on REVERSE for 10 seconds on SP2.

    7. Pour the mixture into the cake tin and bake for 45 to 55 minutes on 180c.
    8. Once cool, serve with cream of your choice or as it is.
