Cath’s Patty Cakes
- 125 grams Butter, Softened
- 125 grams caster sugar
- 2 eggs
- 250 grams self-raising flour
- 1 level tsp vanilla essence

- Pre heat oven to 180*
- Cream Butter, Sugar and vanilla essence. Mix 45 Seconds speed 5
- Agg 2 eggs and mix 30 seconds speed 4
- Add S R Flour. Mix 20 seconds Speed 5
- Add a little milk if batter is too stiff
- Place in tablespoonfuls into greased or lined patty tins
- Bake for 10-12 minutes till golden brown on top
- When cool ice

To make chocolate patty cakes replace some flour with cocoa
