Dough

  • 150 grams Butter
  • 90 grams brown sugar
  • 70 grams caster sugar
  • 1 --- 70g egg
  • 2 teaspoons Vanilla Bean Paste
  • 1 pinches maldon salt
  • 260 grams Self Raising Flour
  • 1 --- block, Aldi hazelnut milk chocolate

Recipe's preparation

    Method
  1. Pre heat oven to fan forced 160c
    Cut cold butter into cubes and add to bowl. Cut 10sec sp5.
    Put sugars in, mix 10sec sp5.
    Insert butterfly and scrape down. Set timer for 1 minute. Mix 20sec sp4, scrape down and repeat 2 more times.
    Add salt, vanilla and egg. Set timer for 1 minute. Mix 20 sec speed 4, scrape down and repeat 2 more times.
    Remove butterfly.
    Add SR Flour, Mix Reverse 10 sec, sp4. Scrape down, Repeat.
    Push mixture to one side of bowl add room temp chocolate broken into chunks (see picture above) Mix reverse 5 sec sp4, scrape down, Mix 5 sec sp4 (not reverse).
    Chunks of chocolate are ok. Grab chunks of mixture and roughly roll into a ball. I use 45grams each for a large cookie. You can use your scales and a small bowl to weigh your mixture if you want to have the cookies the same size.
    Bake for 10 minutes, then turn tray around and another 2 minutes. Cool on the tray. If you want crunchie cookies not chewy then cook for another 2 minutes. Perfecto! Enjoy!     If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
