Ingredients

Cake

  • 2 tablespoons chia seeds, (powdered or substitute with egg replacement powder)
  • 6 tablespoons warm water, (omit if using egg replacement powder)
  • 30 grams millet
  • 65 grams brown rice
  • 35 grams Tapioca
  • 1 teaspoon xanthum gum
  • 120 grams coconut oil
  • 100 grams coconut milk
  • 1 teaspoon Vanilla Bean Paste
  • 100-120 grams coconut palm sugar, (or rapadura; use more sugar if cake is not being iced)
  • 2 teaspoons baking powder, (gluten free)
  • 25 grams cacao powder

Recipe's preparation

  1. Preheat over to 180C and grease/line 20cm round cake tin.

  2. Combine chia seeds and warm water in small bowl and set aside.

  3. Add millet into mixing bowl and mill 1min/sp.9.  Scrape down sides.

  4. Add brown rice into mixing bowl and mill 3mins/sp.9.  Scrape down sides.

  5. Add tapioca, xanthum gum and baking powder into mixing bowl then combine 5secs/sp.8.

  6. Add chia seed egg, coconut oil, coconut milk, vanilla bean paste, coconut palm sugar and cacao powder into mixing bowl and mix 30secs.sp.5.

  7. Pour into cake tin and bake 40-50mins or until skewer comes out clean.

The picture shows the equivalent of 3x batches which were made into 2 cakes to create a two-layer cake capable of feeding a party of 20.  This recipe (or 1.5x) would make a nice amount for a school or Daycare birthday cake/cupcakes.

 

It is best to bake gluten free cakes for longer-at a lower heat and then let the cake cool in the oven after it has been turned off (leave the door ajar if it is an electric oven).

 

To ensure your baking paper does not stick, crinkle it before lining your cake tin.
