Ingredients
Chocolate Cake
- 80 g milk/ dark chocolate - chopped
- 210 g plain flour
- 180 g caster sugar
- 30 g cocoa
- 1 tsp bicarbonate soda
- 70 g extra light olive oil
- 1 tsp white vinegar
- 1 tsp vanilla essence
- 220 g cold water

Pre heat oven to 175C and grease a 23cm round cake tin.
Place chocolate into mixing bowl and grate 8-10 sec/speed 8.
Melt chocolate for 2 min/50C/speed 3. Scrape sides of mixing bowl with spatula.
Add flour, caster sugar, cocoa and bicarbonate soda and mix 20 sec/speed 5 until well combined. Scrape sides of mixing bowl with spatula.
Add oil, vinegar and vanilla, combine on speed 5 for 30 seconds until thoroughly moistened - scrape sides of TM bowl as required.
Pour in cold water and mix 15-20 sec/speed 5 until the batter is silky smooth.
Pour into prepared cake tin and bake for 30-35 mins - skewer test to ensure cooked through the middle.
Cool on rack, dust with icing sugar or add icing for an extra special treat.

For severe allergies unable to tolerate even traces of nuts, Aero chocolate bars are the only chocolate on the market free from traces of nuts - they are imported from the UK.

Cooked well but used self raising flour instead of plain...
Absolutely delicious! Made 2 for my daughter's birthday party and put one on top of the other with whipped cream in between and then iced the top with Betty Crocker's Milk Chocolate Frosting and Smarties. Everyone commented on how moist it was and yummy!
Tasted lovely but mine was very flat - only about 3 cms thick. Is that how it is supposed to be? Or am I doing something wrong? Was it supposed to be self raising flour??
