Ingredients
Chocolate coconut cake
- 150 g Butter
- 220 g caster sugar
- 200 g Milk
- 2 eggs
- 40 g cocoa powder
- dash vanilla extract
- 240 g SR flour
- 45 g Desiccated Coconut, plus extra for sprinkling (optional)
- chocolate flakes, for sprinkling (optional)
Icing
- 160 g Icing sugar mixture
- 20 g cocoa powder
- 40 g Butter, softened
- 2 tablespoons Milk

- Preheat the oven to 180°C.
Grease and line a slice tin.
1. Melt the butter, 60°C/2 mins/sp1.
2. Add all the other ingredients, except the coconut and flour, sp4/30secs. Scrape.
3. Add the flour and the coconut, sp 4/30secs/"Counter-clockwise operation" .
4. Bake for 30-35 mins or until cooked when tested.
5. Leave in the tray for 10 mins then transfer to a tray to cool.
6. Ice when cool enough. - 1. Combine all the ingredients sp4/20 secs.
2. Spread evenly over the cake and sprinkle with (optional) coconut or chocolate flakes.
