Ingredients

Chocolate coconut slice: Base

  • 150 g Butter, Chopped
  • 200 g brown sugar
  • 1 egg
  • dash vanilla extract
  • 80 g plain flour
  • 50 g self-raising flour
  • 30 g cocoa powder
  • 40 g dessicated coconut

Icing

  • 210 g icing sugar, 1.5 cups
  • 30 g cocoa powder, 1/4 cup
  • 20 g Butter, Chopped
  • 1-2 tablespoons dessicated coconut
  • 40 g Boiling water, App 2 tbs

Recipe's preparation

    How to:
  1. Preheat the oven to 180°C.
    Grease and line a slice tin, extending paper to allow for easy lifting.

    Melt the butter, 1-2 mins /50°C/sp2 (until melted)

    Add the sugar, egg, vanilla, flours, and cocoa 20secs/sp4

    Add the coconut, 10secs/sp4/Counter-clockwise operation"Counter-clockwise operation"

    Bake for 25 mins or until cooked when tested.

    Cool in the pan before icing and sprinkling with the coconut.
  2. Icing:
  3. Combine all (except for the coconut)in a bowl until a smooth paste is achieved. You may need more/less water.

    Combine all 20/secs/ sp 4, or until smooth.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     The base has more of a brownie consistency than a crumbly base, a big hit at a work morning tea!

    Good flavour but a bit dry. Next time I would try cooking for 20 mins on 160 deg.

    These were awesome! Very easy to make, a big hit in our house. They freeze very well also. I put into the microwave to defrost, super yummy. Thanks Monica for a really tasty slice. Smile
