Ingredients

Chocolate mandarin cake

  • 300g Mandarins (whole)
  • 1L water
  • 200g Dates(pitted)
  • 125ml Boiling water
  • 130g almonds
  • 170g raw sugar
  • 140g plain flour, Or 1 cup rice flour
  • 1tsp baking powder
  • 1/2tsp bicarbonate soda
  • 30g cocoa, Or cacao
  • 2 eggs

Recipe's preparation

  1. Place the whole mandarins into the steamer basket and fit into the Closed lid"Closed lid" filled with 1L of water. Replace lid and cook on Varooma, Sp 3 for 1 hour.
    Remove the basket and set aside to cool
    Cover the dates with boiling water and set aside.
  2. Clean and dry the bowl then add the almonds and grind for 10s, Sp 7.
  3. Add the sugar and blend 5s, Sp 8
  4. Add the flour, baking powder, bicarbonate and cocoa and blend for 5s, Sp6
    Empty into a large bowl.
  5. Without washing the bowl add the cooled mandarins and the dates with the soaking water and blend for 20s, Sp 5.
  6. Scrape down the bowl and add the eggs. Blend 20s, Sp 6 till thick and creamy.
  7. Add the dries back in. Replace the lid and blend 10s, Sp 6. You might need to give it a bit of a hand with the spatula through the hole as it is quite thick. Scrape down the sides well and repeat.
  8. Bake at 180 C in a 20cm round or square pan for 45-50 min or until a skewer comes out clean.
  9. Serve dusted with icing sugar and a dollop of Greek yogurt or cream to taste

This recipe is gluten free if you use the rice flour.
