Ingredients

Chocolate zucchini cake

  • 100g oat flour, Grind oats in the thermomix 10secs speed 1020g
  • 20g Cocao, 1
  • 1 1/2tsp baking powder
  • 1/2tsp bicarbonate of soda
  • 1/4tsp salt
  • 130g Dried Dates
  • 120g warm water
  • 1tsp vanilla extract
  • 60g coconut oil, Melted
  • 80g Vegan choc chips
  • 100g Zucchini grated

Icing

  • 130g dates
  • 120g full fat coconut milk
  • 20g tahini
  • 30g Cocao, You can double this but this was to my taste
  • 60g coconut oil

Recipe's preparation

    Cake
  1. i first of all put oats, ,cocao,bp,bsoda,mix 30secs speed 9,set aside
    Chop zucchini 3secs speed 5 set aside
    Put dates,water,vanilla,coconut oil in jug process 20secs speed 5 increase to speed 9 ,you may have to stop scrape down and process few times to achieve smooth approx 2mins
    Set oven to 180 and grease a 20x20cm dish
    add zucchini and choc chips and dry ingredients and mix 20secs speed 4 ,I then mixed through with spatula pour into greased 20cmx20cm tin I used glass one.cook for 20 min approx

  2. icing
  3. blend coconut milk and dates for 30secs speed 5 increase to speed 8 scrape down add rest ingredients and process again for 1-2 mins till smooth.pour over cold cake and refrigerate till set hour or more

Tip

This is vegan egg free ,nut free and gluten free it’s very rich so serve small slice it’s also processed sugar free
the original recipe is from sweetly raw although it’s cooked

    I made this with my 5year old boy, the cake is super moist and very delicious! I love how healthy this is also. The choc topping is a little bitter, and was too much made in the bowl.
    But overall a success and will definitely be doing the cake again!
    We also made these into muffins with pan, still 20mins in oven.
