Ingredients

Vi's Christmas Scones

  • 450 grams self-raising flour
  • 60 grams sugar
  • 1 teaspoons christmas spice mix, see Cookidoo for recipe or mix spice can be used in replace
  • 60 grams Butter, cubed
  • 100-150 grams christmas pudding, or left over christmas pudding
  • 250 grams Milk

Recipe's preparation

  1. Preheat oven to 200°C and line a baking tray with baking paper.
  2. Place flour, sugar, butter and christmas spice mix in mixing bowl then Lid on with MC mix 4 sec/speed 5.
  3. Add milk & crumber christmas pudding, Lid and MC on & knead for 20 sec/knead.
  4. Tip out dough onto a well-floured surface, (this dough can be sticky, don't be shy using extra flour ontop as well) lightly pat and roll out to about 4cm thick. Stamp out using an 8cm round cutter and place onto baking sheet. Gently gather remaining trimmings together , re-roll and stamp out more scones. brush with milk ( optional - sprinkle lightly with raw or Demerara sugar or cinnamon sugar.)
  5. Blend"Blend" Bake for 14-17 mins. (Until slightly golden brown)

Tip

This recipe is perfect for using leftover Christmas pudding, but it's also suitable for store-bought versions.
Serve warm, split and buttered with butter or extra special with brandy butter (see Cookidoo for recipe).
