Ingredients

Vi's apple scone cake

  • 350 grams plain flour
  • 1 tablespoons baking powder
  • 1 pinches salt
  • 125 grams unsalted butter, diced
  • 80 grams caster sugar
  • 180 grams Milk
  • 140 grams apple
  • 60 grams sultanas
  • extra milk to brush onto dough
  • tablespoons Demerara sugar, or raw sugar for sprinkling on top of your scone

Recipe's preparation

  1. Preheat oven to 200°C and line a baking tray with baking paper.
  2. Place flour, baking powder and salt in mixing bowl then mix 4 sec/speed 5.
  3. Add butter and caster sugar then mix 4 sec/speed 6.
  4. Add milk knead for 20 sec/knead.
  5. Add apples and sultanas to scone mixture, stir gently with spatula until partly mixed in (mixture will be clumpy).
  6. OPTION ... Single scone or Scone ring

    **Single scone:Tip out dough onto a lightly-floured surface, lightly pat and roll out to about 4cm thick. Stamp out using an 8cm round cutter and place onto baking sheet. Gently gather remaining trimmings together , re-roll and stamp out more scones. brush with milk and sprinkle with raw or Demerara sugar. Bake for 14-17 mins. (Until slightly golden brown)

    **Scone ring :Tip out dough onto a pre-prepared tray with baking paper, bring dough together into a ring leaving the inside hollow. brush with milk and sprinkle with raw or Demerara sugar.

    Bake for 17-20 mins. (Until slightly golden brown)
  7. Allow to completely cool on a rack.

    Serve with whipped cream and jam.

Tip

these scone can be made the day before, they will keep fresh.
