Ingredients

Compost cake

  • 100 g olive oil
  • 300 g Assorted peels & skins, Parsnip, beetroot, carrot, cauliflower leaves, apple skins etc
  • 3 eggs
  • 1 level tsp Vanilla Paste
  • 100 g Maple syrup, Can use up to 120
  • 200 g GF Self Raising Flour, Sift into the bowl
  • 1 heaped tsp bicarbonate of soda
  • 1 heaped teaspoons Baking Powder, gluten free
  • 1 level tsp ginger powder
  • 1 level tsp cinnamon powder
  • 120 g coconut yoghurt
  • 1 pinches salt

Recipe's preparation

    Method
  1. Preheat oven 180c . Grease or line with baking powder tin (24-26cm).

    Place scraps into bowl Closed lid"Closed lid" , mc on Spd 7/5 sec.

    Add all remaining ingredients into Closed lid"Closed lid" , blend with mc on10 sec/ spd 5.

    Scrape down sides of bowl and blend again mc on 10 sec / spd 5.

    Pour into prepared tin, bake 180c for 45-60 min, until skewer inserted in centre of cake comes out clean. Allow to cool for 20 min.

Tip

* best to use organic scraps
* be sure verges are cleaned before using peels
* can replace maple syrup with rice syrup or coconut sugar

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
