Preheat the oven to 220deg C
Grease baking trays
Put sugar in bowl, mill 2 sec / sp 9
Add butter to the bowl, and cream the butter and sugar together 15 sec / sp 4, scrape down the sides of the bowl and cream again approx 30sec / sp 4 (until the mix is creamy)
Add the egg to the bowl and mix 8 sec / sp 3-4 or until combined
Add the flour and coconut and combine 10 sec / sp 3, scrape down the sides of the bowl and combine a further 30 sec / sp 4 or until all ingredients are combined. You may need to use the spatula to push the mix into the blades.
Using a teaspoon sized portion of the mix sqeeze the mix together in your hands before rolling into balls, and pressing flat between the palms of your hands.
Dip the pressed biscuit in the extra sugar/coconut and place on the greased baking tray - allow room for spreading between the biscuits
Bake for 8-10 mins or until a pale golden colour
Tip
The uncooked biscuits should be about the size of a 50c piece.
When you take the biscuits out of the oven, they will still be soft, squishy and bendy. Leave them on the tray to cool where they will harden up

thank you for this recipe ....I've had trouble finding a biscuit recipe to adapt to gluten free. while most 'work' they often loose the integrity of the biscuit...tough or chewy... didn't spread for a thin crisp biscuit ....while not 100 percent... very close. I only substituted the flour with gf plain flour and used baking powder..look fabulous and smell amazing. With any luck they'll be crunchy when cool...
