- 200 g dates, pitted
- 100 g Butter, roughly chopped
- 75 g Dark Brown Sugar
- 2 eggs, at room temperature
- 200 ml sour cream
- 250 g plain or spelt flour
- 10 g baking powder

Place lime and dates into TM bowl 10-15 seconds/speed 9. Scrape down sides of bowl
Add butter, sugars and eggs and mix 10 seconds/speed 6
Add sour cream, flour and baking powder and mix 30 seconds/speed 6 using spatula if required
Spread batter into prepared cake tin bake for 35 minutes until a skewer comes out clean.
Top with lemon or lime icing or dust with icing sugar

This recipe was orginally from the "cooking on a budget" book and I have made it several times because it is delicious! My kids primary school kids, my friends and my parents love it (and is one of the few cake recipes that I use that caters for all ages and tastes).
The problem with this posted version is it is not true to the original recipe ingredients as it needs:
100 g raw sugar
70 g dark brown sugar
250 g self raising flour (not plain)
2 large eggs
1 tsp vanilla
I peel my lime and remove all the pith before adding back just the zest as well as the flesh
Oven is heated fan forced to 160 degrees
And the steps are also slightly different:
Step 1, place lime and dates into TM bowl 10-15 seconds/speed 9. Scrape down sides of bowl
Step 2, add butter, sugars and eggs and mix 10 sec / speed 6, scrape sides and mix for 30 sec / speed 6
Step 3, add sour cream and mix for 5 sec / speed 6
Step 4, add flour, vanilla and baking powder and mix 7 sec / speed 7, scrape sides and repeat if necessary (I usually give it a couple of turns by hand to avoid over beating)
Step 5, spread batter into prepared tin, shake to settle
Works in any shape tin and, as a guide so you can adjust based on whatever tin you are using, my 23 cm round springform needs 40-45 mins to cook and it does not dry out. I've made it in a rectangular tin but can't remember how long it cooked for - I would have checked it after 35 mins and made a judegement call on how mch more it needed.
Nice with a cream cheese frosting.
This was pretty bad.
I threw it away, and I hate waste. Thought I'd try it as someone had given a 4-star rating but I should've just given it a miss. Something is missing but I won't be trying to work it out. Sorry for the negative review.
I was wondering - in the recipes preparation/method section, it says in step 2, to add butter SUGARS & eggs, so I was wondering, if mmundy thinks it tasted awful, was it because ONE TYPE of SUGAR had been left out?? 75g doesn't seem a lot of sugar for a recipe with 2 eggs? I was thinking of trying this, but unsure now!
This tasted awful. Not sure whether to peel the lime or not but I threw it in whole. Didn't know what temp to put the overn on so did 180C. Cake took almost 50 mins in a loaf tin. The kids, me and hubby wouldn't eat it.
