- 180 g dates, pitted
- 120 g Butter
- 1 egg
- 170 g raw sugar
- 80 g Coconut
- 160 g Self Raising Flour

Preheat oven to 180C
Place dates in bowl and chop 3 seconds/speed 8. Set aside.
Place butter in bowl, melt 2 minutes/60 C/ speed 3
Add all other ingredients and mix 15 seconds/speed 3 until combined, using spatula if required.Press into lightly greased slice tin and bake for 20 minutes until golden
Leave to cool slightly, remove from tray and slice to serve.
Tip
Try replacing the dates with other dried fruits or adding ginger for a variation.
This recipe is a family favourite first made by my mother and then converted by my daughter for the Thermomix.

Delicious, simple slice, crunchy on the outside, soft in the middle. Yum yum. Followed ingredients exactly, but baked it for 15 mins only. Will definitely be baking this again

Yummy, easy, quick slice. I reduced the sugar to less than half, then added in 100g crushed walnuts and some couverture dark chocolate bits and it was devoured very quickly.
I made it today with a dollop of honey (dessert spoon sized dollop) instead of sugar, and it works! I find I need to keep it in the fridge because it makes it less crumbly. I'll be making this one again. Thanks for the recipe.
Making today, I have a one year old so I'd love to know what I can use instead of sugar?

it is quite rich but a great afternoon treat . I will try a mixed fruit next time.
