Ingredients

Base

  • 110 grams raw sugar
  • 125 grams Butter, Room Temp - cubed
  • 1 egg, Room Temp
  • 1 teaspoon vanilla essence
  • 225 grams plain flour

Topping

  • 220 grams raw sugar
  • 2 Zest & juice of 2 limes
  • 4 eggs
  • 70 grams Shredded coconut
  • 50 grams plain flour
  • 375ml whipping cream
  • 165ml coconut milk

Recipe's preparation

    Base
  1. Mill sugar for 3 seconds speed 9 set aside

  2. Add butter speed 5 for 20 to 30 seconds

  3. Add egg vanilla essence mix speed 5 20 seconds 

  4. Add the rest of ingredients mix on speed 5 for 20 seconds with aid of spatula

  5. Remove from TM bowl and press into slice tray

  6. Remove from oven cool

  7. Topping
  8. Mill sugar and zest/rind for 20 seconds on speed 9 put aside

  9. Juice Limes set aside

  10. insert butterlfy add sugar and eggs mix on speed 4 for 40 seconds

  11. Remove butterfly

  12. Add the rests of the ingredients mix on speed 4 for 10 seconds

  13. Pour mixture over cooled base

  14. Bake 180 degrees for 35 to 40 minutes till golden and set

  15. cool and slice into squares or desired shape

  16. Enjoy 

Tip

Substitute Lime for Lemon

Base is fantastic to use with any favourite topping

    Tastes great!

    I used a square tin, which needs to be lined. Cooked the base for 15-20 minutes in a 180 degree preheated fanforced oven. I rolled out the base with a cup as I had trouble with doing this.

    Also I used greek yoghurt instead of cream and normal milk instead of the coconut milk. Worked out great!

    This was lovely. Very light and tangy. Beautiful flavours. Will definitely make again. Loved the lime flavour but looking forward to trying it with lemon too.

    A huge favourite! I used soy milk instead of the whipping cream and coconut cream instead of the coconut though and it turned out amazing!! Thoroughly enjoyed tmrc_emoticons.-)
