Ingredients
Cookies
- 300 gram Butter
- 175 gram sugar
- 30 gram cocoa powder
- 330 grams plain flour
- 1/2 teaspoon bicarb soda
- 1 teaspoon baking powder
Icing
- 170 gram sugar
- 1 teaspoon vanilla bean extract, (Or Vanilla Essence)
- 3-4 tablespoon hot water
- Edible Glitter or Hundreds and Thousands etc

Preheat oven to 180 degrees Celsius
Line a cookie tray with baking paper or a silicon mat
Weigh sugar (175 grams) into bowl. 10 seconds Speed 9.
Add butter (300 grams). 5 Seconds Speed 8.
Scrape down sides then mix 30 seconds Speed 4
Add Cocoa (30 grams), Baking Powder (1 Teaspoon), Bicarb soda (1/2 teaspoon), and salt (1/2 teaspoon).
Mix 6 Seconds Speed 5. Scrape down sides and repeat.
Bring the dough together by using the knead function 20 seconds on the dough setting.
Mixture seems a little dry but using your hands form small
flattish balls.
Bake for 8-9 minutes. Biscuits will seem quite moist and soft - this is okay. While the biscuits are still warm gently press your thumb into the centre of each biscuit to form an indent then using a metal spatula or a cake slide transfer biscuits onto a cooling tray.
While the biscuits are cooling make the icing centres.
Add 170 grams sugar to bowl. Speed 10 for 10 Seconds.
Scrape down bowl and insert butterfly. Add three tablespoons of cocoa, 1 teaspoon vanilla bean paste of essence and three tablespoons of hot water. Speed 4 for 10 seconds. Check consistency of the icing and if needed add another tablespoon of water and repeat.
Sprinkle with edible glitter or hundreds and thousands.

Ooops.. sorry. I have added the flour to the instructions.. the cocoa was always in the ingredients list though. If they crumbled then it sounds like they were in the oven for too long (perhaps your oven runs a little hotter than mine etc).
These taste yum. But I didnt make the icing as the biscuits just crumbled when I pulled them out of the oven. Also doesn't explain properly when to put in the flour and doesn't have cocoa written on the ingredients list. I will try these again and hopefully will turn out right next time as the flavour is yummo
