  • 600 g dark chocolate
  • 300 g cream

White Choc Ganache

  • 900 g white chocolate melts
  • 300 g cream

Milk Choc Ganache

  • 750 g milk choc melts

Recipe's preparation

  1. 1. Place cream in bowl - 4 mins, temp 100, speed 3

     

    2. Add chocolate - speed 2.5, approx 2 mins or until chocolate is slightly melted

     

    3. Then 3-4 mins, temp 50, 3-4 mins with MC OFF (so no condesation gets in to the ganache)

     

    4. Pour into containers or a bowl and allow to set ideally overnight or until solid.

     

    To use for coating cake, microwave at 40% (don't want it runny) til consistency is good for whipping. Use hand mixer to whip ganache until pale in colour.

     

    Apply as a filling between layers and/or on the outside coating of cake before applying fondant icing.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Thanks for this! I made up 800g of white ganache, cooked over night & whipped. Perfect proportions. I added a drop of vanilla & some whisky to the cool ganache. It covered a 22cm 3 layered mud cake.

    Looking forward to learning new tricks and tips with my Thermomix...

    Hi Mishi. Just checking whether you have to whip the ganache before using it as a firm setting coating around a cake before applying fondant? Whenever i have made ganache for coating cakes without the thermomix, i don't whip it. Thanks!

    This was AMAZING! So easy to make. Would help if the steps were set out more clearly though as I totally missed the cooling then whipping part at first! Once it had been in the fridge overnight I followed the instructions and it was DEVINE! Covered my sons birthday cake beautifully and was pale and fluffy and smoothed beautifully. Thank you!

    I'm giving it a go tonight to use as filling and to coat a birthday on cake sunday.  Just a question on step 3.  Sorry, I wasn't sure what the correct speed should be.  you stated 3-4 mins and temp of 50, then 3-4 mins again.  I used speed 3 anyway and I can't wait to put it all together.   Thank you for your recipe.

    sorry just saw this and is sooooooooooooo late after you asked the quesstion tmrc_emoticons.( 

    I set it in the fridge til solid usually 2 days before use. THen i pop in microwave to soften, then WHIP it either in stand mixer or hand mixer and use to fill the cake between layers. Also use it this way to coat the outside before applying fondant Hope this helps. Mish tmrc_emoticons.)
