Ingredients

Biscuit Dough

  • 225 g honey
  • 225 g sugar
  • 225 g Butter
  • 125 g water
  • 570 g plain flour
  • 1 heaped teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1 heaped teaspoon bicarbonate of soda
  • 1 teaspoon ground ginger

Recipe's preparation

    Method
  1. Place a large mixing bowl on the lid of the thermomix bowl and select the scales mode. Weigh in the plain flour. Set aside.

  2. Into the mixing bowl add in the honey, sugar, butter and water. Select the warm up mode. Warm Up"Warm Up" 50°C. This may need some resting time after the mode is complete for the butter to melt completely.

  3. While your butter mixture is melting, measure the ground cloves, ground cinnamon, bicarbonate of soda and the ginger into the bowl with the flour. Either sift together or mix well with a wire whisk.

  4. Make a well in the centre of the dry ingredients and pour in the cooled butter mixture. Mix well.

  5. Cover with a teatowel and leave overnight on the bench. Do NOT refrigerate.

  6. Preheat the oven to 180°C.

  7. Roll into teaspoon size balls. If you flatten them slightly you will get a crisper biscuit.

  8. Bake for 15 minutes or until golden brown.

  9. Biscuits will be quite soft when they come out of the oven, but will harden on cooling.

  10. Dip cooled biscuits in royal icing and leave to set. Enjoy.
