Ingredients

Mango Chutney

  • 2 cloves garlic
  • 10 g fresh ginger, cut in thin slices
  • 80 g onion, cut in half
  • 20 g water
  • 250 g sugar raw
  • 600 g mango, flesh only cut into pieces
  • 100 g green apple, peeled & diced
  • 120 g vinegar, malt
  • 1 teaspoon salt
  • 70 g dates, cut into quarters
  • 70 g sultanas
  • 1/2 teaspoon ground turmeric
  • 1/8 teaspoon chilli powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin

Recipe's preparation

    Method
  1. Place garlic & ginger into mixing bowl and chop 2 seconds/speed 8. Scrape down side of mixing bowl.

  2. Add onions & chop 3 sec/speed 5. Transfer into a bowl and set aside.

  3. Place water & raw sugar into mixing bowl and cook 5 minutes/100°C/Speed 1.

  4. Add reserved garlic, ginger & onion mixture, mangoes, apple, vinegar, salt, tumeric, chilli powder, cinnamon, cumin, dates and sultanas. Place simmering basket on lid of mixing bowl instead of the measuring cup and cooke 45 minutes/100°C/Speed 1.

  5. Remove simmering basket, insert measuring cup and mix 10 sec/Speed 4. Pour into sterilised jars with twist off lids and close immediately. Allow to cool and serve or store in a cool, dry place.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
