Ingredients

Corn Beef Fritters - just like Mum used to make

  • 1 onion, medium
  • 300 g corned beef, cut into chunks
  • 350 g plain flour
  • 2 teaspoons baking powder
  • pinch salt
  • 2 eggs
  • 375 g Milk
  • 200 g frozen corn kernels

Recipe's preparation

    Method
  1. Peel onion & cut in half. Place in TM bowl. 4 sec/speed 5. Scrape down bowl.

  2. Add cold meat. 15 sec/speed 4/reverse. Scrape bowl. Repeat until meat is shredded to your taste. Place in bowl and set aside.

  3. Add plain flour, baking powder and pinch of salt and mix 5 seconds/speed 4.

  4. Add eggs & milk. Mix 5 sec/speed 4. Scrape down sides. Mix 10 sec/speed 4.

  5. Add corned beef & onion mixture, frozen corn kernals. Mix 20 sec/speed 4/reverse. Repeat if required.

  6. Set batter in fridge until you are ready to use.

  7. Heat oil in a frypan over medium heat. Measure out 1/3 cup of batter into hot oil. Cook the fritter for 2-3 minutes each side, or until golden and cooked through. Transfer to a baking tray or plate lined with paper towel. Allow them to cool slightly and then enjoy.

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
