Ingredients

Gluten, Dairy & Sugar Free Pumpkin Pancakes

  • 70 g pumpkin, cut in small cubes
  • 1 tbsp coconut oil
  • 3 eggs
  • 95 g coconut milk
  • 45 g Gluten Free SR Flour
  • 30 g gluten free cornflour
  • 20 g xylitol
  • 1/2 tbsp sugar free vanilla extract
  • 1/2 tsp cinnamon
  • 1/8 tsp Nutmeg
  • 1/8 tsp Bi Carb Soda
  • 1/8 tsp Sea salt, fine

Recipe's preparation

    Gluten, Dairy & Sugar Free Pumpkin Pancakes
  1. Half fill thermo bowl with water

    Insert simmering basket and fill with 70 g diced pumpkin (approx 1/4 cup)

    Cook at 100oC - 15 min - speed 1

    Remove simmer basket from Thermo bowl with spatula, discard water 

    Place all ingrediants in bowl starting with coconut oil if solid, warmth of bowl should help melt

    These quantities will make a thick crepe like pancake if you would like a thicker pikelet as pictured increase the GF SR Flour by 40 g

    Blend 30 seconds - speed 5

    Scrape down sides with spatula

    If not totally combined blend again for 10 seconds on speed 5

    Mixture is now ready to cook on a frypan smeared with a little coconut oil
