Ingredients

Gluten Free Almond and Choc Chip Biscuits

  • 200 graw almonds
  • 30 g oil, we like macadamia
  • 3/4 cup brown sugar (or rapadura, or coconut sugar)
  • 1 egg, (or 1 Tbs chia seeds soaked in 3 Tbs water until thick)
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt, flakes
  • 90 g good quality dark chocolate (in small pieces)

Recipe's preparation

  1. Preheat oven to 180 degrees Celcius and cover a baking tray with baking paper or a silicon mat.

    Place almonds in the TM bowl and grind on speed 9 for 10 seconds.

    Add oil and mix on speed 9 for 10 seconds.

    Add sugar, egg (or chia mix if using), baking soda and salt and mix on speed 4 for 10 seconds.

    Add chocolate and mix on Counter-clockwise operation"Counter-clockwise operation" speed 4 for 4 seconds.

    Spoon tablespoon sized balls onto the tray and allow room for spreading.

    Bake for 12 to 15 minutes or until browned.

    Cool on the tray for 5 to 10 minutes or until they are firm enough to transfer to a cooling rack.

Tip

I use a small ice cream scoop to transfer the mixture to the baking tray.

    Really nice. I measured the 3/4 cup brown sugar = 100g. I used milk choc chips as that's what I had. My cookie scoop made 18 biscuits. I'm sure they'll be scoffed straight away.

    Delicious!
    Have made them to your original recipe and they are yum! Now we're keto, I changed the sugar for lankato golden monkfruit and, to make nutfree for school lunches, used sunflower seeds instead of almonds. NOTE - if making with sunflower seeds, lower temp to 175 and only cook for 12 minutes to prevent burning.

    Super easy gluten / grain free cookie! Very quick and easy to make, hold together perfectly and they're really light! I used 1/2 cup sugar, almond oil & 85% dark choc bits so they're not sweet at all, but perfect for a low carb-ish treat!! Thank you tmrc_emoticons.-) (Love that you have the egg substitute there as well for those who want to make them vegan)
