Ingredients

Cake

  • 200 g Dry Quinoa
  • 100g cocoa, I used Blooker Brand
  • 100 g Butter, Cubed
  • 20 g coconut oil
  • 100 g Rapadura Sugar, Or more to taste, cake is not sweet
  • 5 g bicarb soda
  • 1 teaspoon baking powder
  • 4 eggs
  • 200 g Milk
  • 1 pinch salt
  • 10 g vanilla extract

Recipe's preparation

    Quinoa
  1. Rinse quinoa really well.  I use a nut milk bag in the steamer basket (see my facebook page for directions - facebook.com/goaheadmakemylunch)

     

    Pour 800g water into jug. 

     

    Tip quinoa into basket and place in jug.  Steam for 18 minutes / 100 degrees / speed 2-3. 

     

    Allow to cool.  If any quinoa is left in the jug, tip it into the basket.  You should have 500g of cooked quinoa. 

     

    Preheat oven to 180 degrees.

  3. Place butter, sugar and coconut oil into jug. Melt for 3 minutes / 80 degrees / speed 2. 

     

    Add milk, vanilla and eggs and mix 5 seconds / speed 5. 

     

    Add all dry ingredients except quinoa and mix 20 seconds / speed 4. 

     

    Mixture should be quite runny. 

     

    Add quinoa and mix 5 seconds / Counter-clockwise operation"Counter-clockwise operation" / speed 3 until combined.   If you don't want to have the textural element of quinoa, mix for 10 seconds / speed 5 to puree some of the grains. 

     

    Pour into a lined round cake form and bake in the oven for 45 minutes or until centre no longer wobbles. 

     

    Allow to cool before icing with frosting of choice (I used a chcolate cream cheese icing).

Tip

Use either colour of quinoa or a mixture of colours.

    Made this yesterday for my son's 5th birthday! It was a huge hit. Super moist and delicious.  I added 40g more sugar as I wanted to make sure it went off well because it was birthday. next time will reduce closer to recipe amount.  I used Raw Cacao, and coconut sugar.  Everyone was raving about the cake !!!  They couldn't believe it was made from quinoa. Next time I will blend a little longer to smooth out the quinoax  Excellent. Thank you sooooo much. (I made a buttercream icing sugar to go on top.)

    I added slightly more sugae. It was moist and yummy. I blended til smooth rather than leaving the quinoa grains visible.

    My daughter & I made this cake on the same day, but have both found it very dry, just couldn't eat it sorry tmrc_emoticons.~

    I loved this cake!  Great way for me to get some extra protein into my picky little boy.  I always try getting away without icing with him but he didn't like it at first so I gave in and iced it and he scoffed it!  It turned out well, nice and moist.  I followed the directions to puree the grains to hide them a bit more.  I use normal cocoa as cacao stimulates our adrenal glands too much.  Thank you for the quinoa rinsing and cooking instructions, I will use this method every time now I have my thermomix as I used to always let it boil over or dry out too much in the pot! Can highly recommend trying this one, thanks for a great recipe tmrc_emoticons.)

    tmrc_emoticons.( tmrc_emoticons.(Hi, I made this for my daughters birthday yesterday, no one liked it sorry, tasted burnt, thought there was to much cacao in it, also couldn't buy the rapadura sugar, so used raw sugar tmrc_emoticons.| tmrc_emoticons.| tmrc_emoticons.| tmrc_emoticons.|

    I made this one - hubby seems to like it, I'm not so sure - I think it needs a bit more sugar too (I used 1--g rapadura). I didn't think the quinoa taste would be so strong. I think I prefer the Magic Bean Cake where no one knows any different!
    But in saying that - this cake is still a great one - it rose beautifully and hubby likes it, so happy days. Definitely needs some icing!

    i didn't mind it not being too sweet.... i added maybe 120 g of sugar and a bit of butterscotch schnaps..just to jazz it up a bit... was really moist.. i quite liked the cake..my son however....why are there worms in this cake ??  nevermind, just eat it..its good for you !!  ha ha

    Just had a look at the original recipe and it asks for 1 cup sugar which is around 200g. I'm going to use the cup measurements next time and check the weights given in the recipe.
