Ingredients
Lemon Nut Bread
- 80 grams almonds or nut of your choice
- Rind of 1 Lemon
- 180 grams sugar
- 210 grams plain flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 120 grams Butter
- 80 grams Milk
Lemon Syrup
- juice of 1 lemon
- 120 grams sugar

I'm cooking this todayRecipe's preparation
1. Preheat oven to 180 degrees
2. Grease and line a small loaf tin (20cm x 10cm)
3. Place almonds in bowl and chop for 3 secs/ speed 6. Set aside
4. Place lemon rind in bowl and grate 10secs/speed 9. Scrape down sides with Spatula. Repeat if necessary. Or 2 teaspoons of preprepared lemon rind. Set aside with almonds.
5. Put flour, sugar, baking powder and butter in bowl. Mix for 10sec/speed 4 Scrape down sides with Spatula.
6. Add eggs and milk mix 3 sec/speed 4.
7. Fold in rind and almonds 5 secs/ speed 2.
8. Pour into prepared loaf tin
9. Cook for 1 hour
1. Add lemon juice and sugar just prior to removing lemon nut bread from oven. 2 mins/ 80C/ speed 1
2. Remove cooked lemon nut bread from oven and leave in tin
3. Pour prepared lemon syrup over cake and let sit for 10 minutes before turning out of tin.
4. ENJOY
I prefer it best warm with a cup of tea.

Tip
Whenever I use bulk citrus for juice I peel off the rind and grate it 10secs/speed 9. Then I store rind in a ziplock bag in the freezer.
