Ingredients

Dough

  • 200 g plain flour
  • 5 tsp Brewer's Yeast
  • 3 tsp linseed, Ground
  • 0.5 tsp baking powder
  • 0.5 tsp bicarbonate of soda
  • 0.5 tsp cinnamon, Ground
  • 0.25 tsp salt
  • 170g g Butter
  • 54.8 g coconut oil
  • 200 g raw sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 225 g sultanas, Or Chocolate Chips, nuts, nut butter, cranberries etc
  • 270 g rolled oats

Recipe's preparation

  1. Preheat the oven the 350 degrees F.

  2. Add butter and coconut oil to mixing bowl and mix 4 minutes speed 4 until creamy. Scrape down sides of bowl if needed.

  3. Add in the sugar and mix 4 minutes speed 4. Scrape down sides of bowl if needed.

  4. Add in the edd and egg yolk and mix 2 minutes speed 4.

  5. Add Vanilla and mix 30 seconds speed 4.

  6. Mix oats, flour, yeast, flaxseed, baking powder, soda, cinnamon and salt in a seperate bowl and gradually add to mixing bowl. 3 minutes speed 2. Stir in the Sultanas until evenly mixed.

  7. Place tablespoons of mix on prepared Cookie tray 3-4 Cm apart and bake 10-14 minutes or until just golden on the bottom.

Tip

1- Freezable.
2- May use all butter if you dont have coconut oil. If you use Coconut oil in place of butter the cookies will spread more.
3- May increase the Brewers yeast by 1-2 tbs.
