Ingredients

sugar dusting

  • 100 grams raw sugar

cookie dough

  • 200 grams raw sugar
  • zest of 1 lemon
  • 125 grams unsalted butter, at room temperature
  • 2 eggs
  • 300 grams plain flour
  • 1.5 tsp baking powder
  • half tsp salt

Recipe's preparation

  1.  Place 100gm raw sugar in bowl 10 sec/sp10. Set aside.

  2.  Place 200gm raw sugar and zest of one lemon in bowl 10 sec/sp10

  3. Add butter and mix 15sec/sp5. Scrape down sides and repeat.

  4. Add eggs and mix 5 sec/sp5.

  5. Add flour, baking powder and salt. Mix 10sec/sp5. Put mixture into glass bowl and set in fridge for 30 minutes or until firm.

  6. Roll teaspoon sized balls of mixture. Roll each ball in sugar dusting to coat. Space on lined baking tray and bake at 180 deg for 9-11 minutes. Cool completely before removing from tray.

Tip

You could use orange in place of lemon as a variation.

    Yummy!!
    These were a hit and so simple to make. I added vanilla paste to the batch definitely added an extra flavour. Will be adding this to my favourites .

    First time I made these my eggs must have been too big because the cookies flattened out a lot but they were still delicious. I also wondered if I should have refrigereated the mixture for longer as it was quite sticky. So, my second attempt I modified and, very unscientifically, used only one egg, 125 g of sugar and refrigerated the mixture for 2 hours. Baked for 10 mins and gave them an extra dust of sugar after baking. Perfect! They're pretty good as orange cookies as well! Thanks for the recipe.
