  • 190 grams Butter
  • 60 grams plain flour
  • 200 grams icing sugar, plus extra to dust
  • 120 grams almond meal, Or Whole Almonds just mill prior
  • 5 egg whites
  • zest of 1 lemon

Recipe's preparation

  1. Preheat oven to 180 degrees.

    (Mill Almonds if using whole Almonds 10 seconds speed 4 and set aside)

    Melt butter in Closed lid"Closed lid"  1 minute speed 4, set aside.

    Place flour, icing sugar and milled almonds into Closed lid"Closed lid" and mix 10 seconds speed 4 and set aside.

    Pcace egg whites into Closed lid"Closed lid" and beat for 15 seconds speed 2. Add all dry ingredients including melted butter to egg whites and combine 20 seconds speed 2 unti completely combined.

    Fill ech tray 2/3 full. Bake 25-30 minutes until golden brown and a skewer inserted in the centre and comes out clean.

    Remove fom oven and leave in the trays for 5 minutes, then turn out onto a wire rack to cool down compleatly.

    Dust with icing sugar and serve.

    I've had these saved for ages and finally made them today. They turned out amazingly! As I'd zested a lemon, I also added the juice, yet the lemon flavour was still really subtle. I milled the almonds at a higher speed (10) to get the almond meal texture. I will be adding these to my regular repertoire. Thanks so much for posting the recipe here. Smile

    Made these today my hubby has eaten 6 already I'm off to make another batch. I'll add a bit more lemon and I was sure they would not bake as the mixture is very liquid but they were perfect. I notice u don't mention the lemon rind in the method I did mine at the end
    thanks heaps these will be a great treat for my dairy free family on Mother's Day
