Ingredients

  • 1 lemon, rind peeled
  • 170 g sugar
  • 60 g Butter
  • 1 egg
  • 5 g vanilla, (1 tspn)
  • 10 g lemon juice, (2 tspn)
  • 280 g plain flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 300 g yoghurt

Recipe's preparation

  1. Peel lemon rind into TM bowl and grate 10 seconds speed 9

    Add sugar to bowl and mill 10 seconds speed 9

  2. Add 60 g butter & mix 30 seconds speed 5

  3. Place whisk in bowl and add egg, vanilla & lemon juice.

    Beat 1 minute speed 4, then remove whisk

  4. Add yoghurt, flour, baking powder, bicarb soda and salt.  Mix 20 seconds speed 5

  5. Divide evenly among cupcake pans lined with papers.  Bake 160 degrees for 25 minutes.

Tip

Can steam cupcakes in Varoma if you wish rather than baking, but mixture probably needs to be halved otherwise two batches

    Delicious! I substituted plain flour for almond flour and 100g of monkfruit instead of sugar for my diabetic husband and he devoured them.

    Absolutely delicious. I reduced sugar to 100gm, used vanilla yoghurt so didn't add the teaspoon of vanilla, didn't use the whisk and added a couple of handfuls of tiny chocolate chips at the end for 2 seconds on reverse. They were perfect and 'vacuumed' up at morning tea, so will be making another batch this afternoon. Thanks for sharing the recipe.

    I made two batches of these first time round - vanilla and white choc chip (used vanilla yoghurt but didn't add any lemon or vanilla and reduced the sugar to 150g) and double choc chip (same variations again but also reduced plain flour to 240g but added 40g cocoa powder). They turned out beautifully light and soft. Great recipe for using up excess yoghurt. Thanks for the recipe!

    These were beautiful. I had to make a couple of changes due to what I had in my cupboard. I used coconut sugar and only 100g and I also used half plain flour and half spelt. They turned out lovely and moist. Thankyoutmrc_emoticons.-)

    Lovely recipe thank you! I reduced sugar to 150g and only had 280g of yoghurt but they have still worked out fine, lovely and light
