Ingredients

Low Salicylate Chocolate Sweet Potato Brownies

  • 500 g water
  • 400 g sweet potato, Peeled, chopped roughly
  • 100 g Ghee
  • 2 eggs
  • 3 teaspoon gelatin
  • 60 g buckwheat flour
  • 3/4 teaspoon baking powder
  • 40 g Carob Powder
  • 1 teaspoon Vanilla powder

Recipe's preparation

  1. Place water into mixing bowl and varoma into position

    Weigh sweet potato into varoma and steam for 20minutes/Varoma/Sp2 or until sweet potato is soft

    Set varoma aside and drain water from sweet potato, let cool slightly

    Preheat oven to 160 degrees C

    Place warm sweet potato and ghee into mixing bowl and blend 10seconds/Sp6

    Add eggs, buckwheat flour, baking powder, caron powder and vanilla powder and mix 20seconds/Sp5

    Insert gelatin through the whole in the lid whist batter is mixing

    Transfer smooth mixture to a lined baking tin and bake for 25minutes or until cooked

    Let cool for a minimum of 15 minutes, slice and enjoy!

Tip

This recipe will still work without the buckwheat flour however it doesn't look as smooth and glossy and the texture is a little different

If you can tolerate stevia you can add a scoop or two in however this is a HIGH salicylate food

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Recommended. Made a double batch which made 36 mini cupcakes. Needed 5 minutes more baking time.
