  • 1 mango, diced
  • 160 grams Spelt flour or self raising flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 100 grams Rapadura/Raw Sugar
  • 100 grams coconut oil
  • 55 grams Milk/almond milk

Recipe's preparation

  1. Preheat oven to 220 degrees, prepare muffin tin with patty cake liners.

  2. Mix flour, sugar and baking powder 6 sec/speed 6.

  3. Add all remaining ingredients, mix 30 sec/speed 5, or until a smooth batter forms.

  4. Fill muffin liners halfway, sprinkle with a little additional sugar (to make a crunchy top), and bake for 20-25 mins.

    Cool on cake rack.

    I made these today!!! I had a little play around with the recipe and this is what I did and they tasted AWESOME!!! Kids demolished them before they'd even cooled properly 🤣



    the changes I made:
    210g mango
    90g sugar
    50g coconut oil
    oven 190 degrees - cook for 15 minutes

    all other ingredients & steps remained the same 😊

    Would help if weight specified on the mango as I live in Far Nth QLD and they aren’t small. My first batch was a flop.
