Mum’s Koulourakia (Greek Easter Biscuits)

  • 280 gram sugar, Castor sugar preferred
  • 250 gram unsalted butter, Room temperature softened
  • 3 eggs
  • 2 oranges, Rind and Juice (1 cup)
  • 1/2 lemon, Rind only
  • 2 teaspoons Galliano liquor, Or 1 tsp Vanilla essence
  • 845 grams Self Raising Flour, 6 1/2 cups equivalent

Recipe's preparation

  1. Yields 60 Biscuits

    Preheat oven 180 degrees
    1. Beat sugar with eggs until white and creamy consistency. 6 min sp.4
    2. Add eggs one at a time sp.4
    3. Add orange juice, orange rind, lemon rind and galliano or vanilla essence 10 sec. sp.4
    4. Remove from thermo bowl into a large mixing bowl.
    5. Add sifted self raising flour to the wet mix to combine into a dough. The dough should not be sticky but a soft consistency.
    6. For equal sizing Weigh out 25g per biscuit. Roll each portion into a long snake and twist to shape.
    7. Place biscuits on tray lined with baking paper.
    8. Egg wash and sprinkle with hundreds of thousands or sesame seeds.
    9. Bake 15-18 mins at 180 degrees until golden color

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
